Scallops, avocado, wakame, apples, mango, yuzu and crab rillettes

Today the chef Maxim de Luca proposed to Barcella, singer and novelist from Reims and cook for a day, to prepare a scallop, crab, wakame, apples, mango, avocado and Yuzu.

To cook like a chef, here is the list of ingredients for 6 people and the recipe to follow step by step!

Ingredients

– 18 scallops

– 200 g of crab meat

– 1 bunch of coriander

– 1 shallot

– 1 dl of liquid cream

– 1 mango

– 2 apples

– wakame

– 1 yuzu

– olive oil

Preperation

Wash and peel the apples and mango, then cut them into brunoise. Then, cut the seasoned wakame into julienne and set aside.

Cut the avocados in half, remove the core then add the yuzu or lime. Salt and pepper. Add a drizzle of olive oil and a little cream.

Peel and finely chop the shallot then add it to the cake. Season with salt and pepper, olive oil and chopped cilantro.

In a very hot pan, heat the butter with a drizzle of olive oil, then season the scallops and brown them in a pan. Finally, drizzle with butter.

Dressage

In a large plate, place avocado dots. Then, in a cookie cutter. Place the crab tartare, the wakame and the mango-apple salad, then the seared scallops on top.
