Terroir and history of foie gras from Maison Artzner

To accompany the program, Patricia Houdebert from Maison Artzener presents foie gras and its history in the East of France. For an impeccable flavor, the foie gras is cooked slowly with a low temperature. The Artzener house is a pioneer in its manufacture.

It is Edouard Artzner, the son of the founder Philippe Artzner who contributes to its influence by covering the product with a layer of goose fat in order to guarantee conservation for up to three weeks.

The family story began in 1803, in a store in downtown Strasbourg!

The medieval historian Goerges Bischoff also accompanies you on the show to help you discover the secrets of Alsatian gastronomy. He is the author of the book In the belly of Alsace, the golden age of Alsatian gastronomy, published by Éditions de la Nuée Bleue.

Pretzels, urban farming and chocolate

To punctuate this “Etape Gourmande”, a discovery of the tradition of bread. Immersion in the work of Alsatian bakers, through the artisanal production of bread, kougelhopfs, pretzels or even bredeles. The director of the Maison du Pain makes you discover the museum and the bakery installed in Sélestat.

Market gardener and farmer, Geoffrey Andna is the founder of Îlot de la Meinau. This is the first urban agriculture project in the city of Strasbourg, created in 2014. It introduces you to the eleven hectares of land on which more than fifty varieties of fruit and vegetables grow. The Îlot de la Meinau is also a dynamic living space that generates jobs and promotes ecology and biodiversity.

Finally, the pastry chef and chocolate maker Thierry Mulhaupt lets you discover his exceptional know-how.

Awarded many times, Thierry Mulhaupt takes pleasure in revisiting local specialties, including gingerbread! This specialist whose shops can be found in Strasbourg and Colmar is also the author of books on cooking Chocolat(e), the Colombian adventure for chocolate lovers.
