Pineapple clafoutis in the style of Philippe Lagraula, chef at Villa Mirasol in Mont-de-Marsan

Pineapple goes with many flavors. Used both in cooking and in baking, this exotic fruit is found as a dessert on the Villa Mirasol’s bistronomic menu in the form of clafoutis, this dessert reminiscent of childhood! A clafoutis that took itself for a muffin. Muffin placed on a delicious pineapple and yuzu sauce. Muffin on which and not inside which, there is a brunoise of caramelized pineapple and associated with lemongrass. Still on top, a Nocciola ice cream with whipped cream and meringue!

A dessert with beautiful combinations of taste, between roundness and acidity, soft and crunchy.
