Serve brunch differently! This gourmet creation has become a must-have in my home. When your fruit basket is overflowing with overripe bananas, don’t look far for inspiration. With orange and cardamom, this recipe will transform your morning into an exquisite moment. A delight to make and do again!

French toast with banana, orange and cardamom

Preparation: 5 minutes
Cooking time: approximately 8 minutes
Yield: 4 servings

Ingredients

  • 4 eggs
  • 2 ripe bananas
  • 1/2 tsp. teaspoon (2.5 ml) ground cardamom
  • 1/4 tsp. teaspoon (1.25 ml) vanilla extract
  • 1 pinch of salt
  • 2 tbsp. teaspoon (10 ml) orange zest
  • Butter or vegetable cooking oil
  • 8 slices of bread

Topping suggestions

  • Greek yogurt, to taste
  • Maple syrup, to taste
  • 2 peeled and sliced ​​oranges

Preparation

  • 1. In a blender, combine eggs, bananas, cardamom, vanilla and salt until smooth. Pour into a medium sized bowl. Add the orange zest and mix.
  • 2. In a large non-stick frying pan, melt a piece of butter (or heat a drizzle of oil) over medium heat. Dip and thoroughly soak two slices of bread in the egg mixture, then let the excess liquid drain off. Cook the bread slices for about 1 minute on each side. Add another piece of butter or a drizzle of oil and repeat for the remaining slices of bread.
  • 3. When ready to enjoy, garnish with yogurt, maple syrup and orange slices, to taste.

Making French toast is a great way to use up stale bread.

Consider freezing your overripe bananas. They will be allies for your next smoothies, adding that little appreciated cold side, or to concoct a delicious nice creama dairy-free quick ice cream created from frozen bananas.

To freeze your bananas, peel them, cut them into slices, then carefully arrange them on a plate, spacing them out, before putting them in the freezer. Once frozen, transfer your banana slices to the reusable freezer bag, then place back in the freezer.

Another tasty option is to enjoy these overripe bananas in the form of chips. Simply dehydrate them in the oven or dehydrator. This is a delicious snack!
