The 2022 world champion pizza in duo, called “C’era una volta” which means in Italian “Once upon a time”. The recipe: a base of sea urchin and lobster bisque as well as a garnish consisting of scallops burnt with a blowtorch, garnished with dried caviar and finished with a touch of fleur de sel, prawns marinated in citrus fruits and flambéed in sake, mozzarella balls, Ricotta cream, Ricotta flowers and saffron heart, a dry ink tuile, young shoots of small weights, sea water foam and sea urchin tongues, pistils of dried tomatoes. The pizza is also served with warm sake and sea urchin cream
