At the Salon de l’Agriculture, which opened on Saturday February 25 in Paris, there are long, crowded aisles to walk through all day. So inevitably, at lunchtime, some people want to sit down. But for that, you have to be patient. In a restaurant specializing in the South-West, there is thus at least a 30-minute wait. In another restaurant, Cantal specialties are in the spotlight.
Expensive rental pitches
Promoting Cantal cuisine is the objective of the manager, who hopes to convert his customers to truffade. Truffade is a mixture of potato, garlic and cheese served here with sausage or steak. “The goal is to have new customers, but also to highlight the Cantal department so that these people can come back to us.”testifies the manager of the restaurant. But renting a location is expensive. To be profitable, it must serve around 600 people a day for the entire show. From Auvergne aligot to Breton pancakes, there is something for everyone at the Agricultural Show.
