A dove for Easter | The Press

During the Easter festivities, panettone becomes a dove! Colomba, an Italian Easter specialty, has been revisited by the Montreal company Viva panettone.


Inspired by legends of peace dating back to the Middle Ages, this brioche cake would have been made for the first time as far back as the VIe century. The Colomba de Viva panettone, delicious, is glazed with a crunchy macaronade, made with egg whites, almond powder and icing sugar. It is offered this year in a traditional version, flavored with vanilla and garnished with raisins and candied oranges, or enhanced with chocolate.

Price: $65, on sale directly at the Viva panettone store this Saturday, March 30 or online.
