The secret lies in the unique harmony between the acidity of lemon and the exotic sweetness of coconut.

Oatmeal, tahini, grated coconut

Lemon Coconut Energy Balls

Preparation time: 12 minutes

Yield: 15 balls

Ingredients

  • 2 cups (500 ml) old-fashioned rolled oats
  • 1/2 cup (125 ml) hulled raw sunflower seeds
  • 3/4 cup (180 ml) grated unsweetened coconut
  • 1/2 tsp. teaspoon (2.5 ml) ground turmeric
  • 1/2 tsp. teaspoon (2.5 ml) ground cardamom
  • 1 large pinch of salt
  • 3 tbsp. tbsp (45 ml) tahini
  • 1/4 cup (60 ml) honey
  • 2 tbsp. teaspoon (10 ml) lemon zest
  • 2 tbsp. teaspoon (10 ml) lemon juice
  • 1 C. tsp (5 ml) water
  • Toppings of your choice: grated unsweetened coconut, white sesame seeds

Preparation

  1. In a blender, blend the oatmeal, sunflower seeds, coconut, turmeric, cardamom and salt until you obtain a floury texture. Pour into a large bowl. To book.
  2. In a medium bowl, add the tahini, honey, lemon zest and juice and water. Mix well. Pour into the large bowl containing the dry ingredients and, using your hands, incorporate well.
  3. Still using your hands, form 15 balls. To book.
  4. In a small bowl, pour a few toppings of your choice and roll each ball to coat it well. Moisten the balls with a little water, if necessary, to make this task easier.

The balls will keep for a few days in the refrigerator in an airtight container; They also keep very well in the freezer and can be served as needed.
