Responsible celebrations. Go eat in restaurants concerned with “reducing their environmental impact”

From the Michelin guide, to the Ecotable label and the Kadoresto brand, more and more structures are highlighting the efforts made by restaurateurs in terms of the environment.

The Kadoresto brand offers gift vouchers to eat in eco-responsible restaurants. “This is the gift box that supports restaurateurs committed to local, seasonal food, says Adrien Hays, project manager. We are targeting more than 100 restaurants by the end of 2023. We rely in particular on labels which audit restaurants which have reached a certain level in their commitments. The demand exists on the customer side. We know that the French want to change their consumption patterns, to move towards more responsible consumption patterns.”

To establish its selection, Kadoresto bases itself mainly on the Écotable label, little known to the general public. Some 500 restaurants in France were still auditioned. “These restaurants answer a questionnaire of 150 questions, says Lou Dacquet, communications and marketing manager at Écotable. They also provide us with a month’s worth of invoices so that we can give them a very in-depth audit report during which we give them recommendations to reduce their environmental impact, both on food and on the way in which they create their card. , manage their waste, their resources, the way they furnish their restaurant, everything that can have an impact on an establishment.”

The green stars of the Michelin guide

Those who meet the most criteria are awarded one, two or three ecotables. A classification reminiscent of that of the Michelin guide. Moreover, the prestigious guide has also been awarding its green star for three years.“It will go through its supplies, the choices of producers that the chef can make, respect for the seasonality of the products, list Élisabeth Boucher, communications director of the Michelin guide. It will also involve restaurants making courageous, daring choices in terms of energy saving. Some chefs will choose to forgo air conditioning or have a more economical heating system. We hope that this green star will inspire more and more chefs and their teams and that ultimately, we will no longer need it.”

We are still far from it. Michelin has awarded 88 green stars in France, less than 500 worldwide. A drop in the ocean compared to the approximately 17,000 establishments crowned by the guide, all categories combined.
