Treat

This wine is just starting to arrive, but there are only 100 cases of it and it will go quickly. Emeline Calvez and Sébastien Bobinet cultivate their vines organically in the Saumur region, and favor very little interventionist vinification. It gives wines full of brilliance and vitality, like this Chenin Blanc, with an alluring nose of super juicy fruits, with notes of pear, quince, white flowers, chamomile and honey. Very fruity on the palate too, with the same juicy character, but very dry and taut with invigorating acidity. Slight bitterness, a delicate tannic chewiness and a chalky impression add relief and complexity, and stretch on a long finish. A juicy, crystalline wine that calls for a second glass. Try it with a green apple ceviche, a fennel and orange or grapefruit and avocado salad, grilled fish.
