The turkey, the foie gras … What to do with the leftovers from the Christmas meal? Stéphane Villetorte runs the Influence restaurant in La Chapelle-Taillefert, he delivers a few recipes to brighten up our after-party days. “For poultry, you can recover the meat, mix it with shallots and brown it, explains the chef. Then we connect it with a juice and we make one parmentier“.
For the foie gras, Stéphane Villetorte advises to fry it to make a Rossigni “you must pan-fry the meat and place a slice of pan-fried foie gras on it. If you have foie gras terrine, you can just put it on the meat“.
Vegetables and juices
Conversely, once the leftovers are finished and to eat light after the holidays, the chef recommends vegetables. “You have to cook them and poach them in water. Then you can bind them with spices such as curry or turmeric. Then collect a little cooking juice, reduce it and mix with the vegetables, so you don’t adds no fat“.
Other solution : the juices “celery juice with a little cucumber is super detox and not bad at all, assures Stéphane Villetorte. But you really have to season them for example with turmeric, curry or fresh coriander “.
