Trout from Ossau in Pédéhourat (Louvie-Juzon)

Since December 2021, the small fish farm “La Truite d’Ossau” has been revived thanks to Léa and Sébastien Hochard. It dates from the 1950s, a particularity it was built on the ruins of old thermal baths. Sebastien grew up in the department, he was in college in Betharram and Léa’s family is in Luz-Ardiden. Coming back here was a real family project completed by baby Lucas 5 months. Léa is a geologist and Sebastien has been in the business for 15 years, he even raised shrimp in New Caledonia and Polynesia.

“Ossau Trout”

As Sebastien says, coming to “La Truite d’Ossau is no coincidence! People come here to visit or to discover the products.

At “La Truite d’Ossau” we take care of the environment but also trout fed with insect meal. Sébastien explains to us the ethical policy of his fish farm. This year is difficult with the drought, fish farming is fed by the beds so less water, less production. Trout in all its forms directly at the fish farm and the market halls of Nay on Tuesday mornings and Saturdays. Whole, fillet, Gravelax or smoked elsewhere soon on site, “The Trout” D’Ossau is already on the table of several establishments, the Saint-Pierre in Nay and at L’Etable d’Ossau in Buzy.
