Installed on a promontory of basalt columns, La Tour d’Auvergne is 100 meters above sea level at its highest point. The village is located on the Auvergne Volcan Sancy territory. Classified as a tourist town, snow village, green resort, the Tour d’Auvergne also benefits from the blue flag for swimming in its lake.

The Loops of Sancy

The “Les Bouclettes du Sancy” farm is located in Pissols. 40 angora goats produce a fiber called mohair, very soft yarn. Discovery with Marco and Noémie.

The goats are sheared twice a year. Each goat produces 2 kilos of wool. Depending on the animal, the wool is more or less fine. The finer the wool, the softer it is. The softest wool is used to make stoles and scarves. With the thickest wool, we make slippers instead.

Anthony and Mary took over the farm in 2018. They specialize in raising cows, Montbéliardes and Brunes des Alpes, and goats from the Massif Central. The Massif Central goat originates from Auvergne. It was not officially recognized until 2010. It is a goat breed that stands out for the shape of its horns as well as its semi-long hair.

With their 54 dairy cows, they offer Saint Nectaire ripened on straw, available at the farm. They also manufacture soaps with the thirty goats of the “Massif Central” breed. The animals are raised in the open air with organic nutrition from their agricultural production.

Odile and Christiane prepared the famous buckwheat pumps for us which were unanimous. There is no specific day in the year to savor them. A party in the town, a sporting or festive event, Christiane and Odile set up their device and prepare the buckwheat pumps on their stove and in their tiles, each with their large wooden spatula which has turned more than one pump… Odile and Christiane reveals the recipe and some manufacturing and tasting secrets…

La Tour d’Auvergne pump is a buckwheat crepe. Buckwheat flour is mixed with wheat flour, whey, salt and baker’s yeast. Wait for the dough to rise and cook in the tile. The tile is a cast iron device, very heavy with a handle. Formerly this tile was hung in the fireplace, and the pumps were cooked in this way.
