It is a vegetable very little known to the general public and yet, in Brittany, the spring onion is cultivated with care and meticulousness. This form of onion, more like chives, is used in several cuisines of Breton restaurants. “It’s a product that we now find quite easily in our region”, explains Arnaud Rouaux, spring onion grower. However, you have to be patient, because you have to wait three months before harvesting.
This vegetable with many benefits, especially for the heart, can be consumed in different ways. Omelette or salad, there is something for everyone. With a green and white part, both are edible and some do not hesitate to taste this vegetable in its entirety. A fairly quick cooking time is possible, but for Tugdual Débéthune, chef, it is believed that the vegetable best reveals all its flavors.
