This increase is the consequence of an epidemic of avian influenza which contaminates entire farms.

The egg is one of the most used ingredients in baking. An essential for preparing cakes or ice cream. “You have egg yolk and egg white, it’s something that we use like shell eggs. And in three months it has increased by 11%”, says Stéphane Raymond-Bernardé, manager of the “Glacier 1891” house. According to estimates, the rise in egg prices could even approach 50% this year, for some pastry chefs or restaurateurs. This is the consequence of an epidemic of bird flu which contaminates entire farms.

So, today in France, production is down. “There were about three million hens that were slaughtered in the Pays de Loire and other French regions because of avian flu, this corresponds to about 6% of daily French production”, specifies Loïc Coulombel, president of the national union of egg manufacturers and professionals. To make matters worse, the price of chicken feed also soared with the war in Ukraine.
