Dairy artisan since 1988, the Péchalou dairy produces yoghurts and gourmet desserts with good whole milk from Dordogne cows and sheep from the South West. Lovers of taste, the Péchalou dairy works according to real artisanal methods. It is thanks to the mastery of their know-how and their delicate selection of raw materials that Péchalou offers gourmet products that delight young and old alike. Thomas Breuzet director of the Péchalou dairy opens the doors of his company to us.

Pioneer in the development of the sector Organic cow’s milk from Dordognethe Péchalou dairy works today with 6 organic breeders from the Dordogne and in 2015 launched the exclusive brand for the organic network: Laiterie du Périgord.

“Proud of our roots, we cultivate regional roots: 100% of our cow’s milk comes from farms less than 50 kilometers from our dairy.”

For the past two years, the company has embarked on the Sustainable Organic Company label, awarded by the Synabio (National Organic Union).

Did you know ?

To make Péchalou steamed yogurt, you must

  • Good whole milk from Dordogne cows for smoothness,
  • Traditional sourdoughs for texture
  • Sugar and flavorings for taste.

The milk arriving at the dairy is put in a tank then mixed with the various ingredients: it is heated to be pasteurized in slow cooking. The temperature of the preparation is then lowered to 40° to allow the integration of the ferments and the heating in the pot. The yogurts are stored in an oven for 4 to 6 hours, then a fine and light texture is formed, like in the yogurts of yesteryear.
