The Brittany egg mayo competition, this typical starter of bistro cuisine, was organized during the weekend of April 27 and 28 in Côtes-d’Armor.
Egg mayo is a recipe that everyone knows. But when you want to claim the title of world champion, you have to show a little imagination. “We tried a very lemony mayonnaise with mushrooms and hazelnuts”explains a participant in a cooking competition. “We have small basil leaves, smoked pepper”, specifies another. During this competition, the chefs take egg mayo very seriously and the tests are even timed. The champion of Brittany will qualify for the world final.
Essential cooking
Around their tasting table, the women of a 100% female jury leave nothing to waste, particularly the cooking. Sixteen women were invited to taste eggs mayonnaise, in Dinan (Côtes-d’Armor), for the Breton competition for this typical bistro starter. “I have a weak history for eggs mayo and I was lulled by my mother’s motto which said ‘you can tell a good bistro by its egg mayo'”estimates a culinary journalist.
