The Domaine du Bout du Monde in Pissot

Since February 4, 2015 the winery “The Domain of the End of the World” is run by Véronique Vialard and Olivier Candon. 3.5 hectares which have good potential. No plowing, the soil is not worked. The grass is kept under the rows, the microorganisms remain alive. The environment and the know-how of our two winegrowers make their wines unique. Organic farming and biodynamics are at the heart of their viticultural practices.

The vines are pruned Poussard which avoids hurting the feet and gives them more vigor. Planting density is 6,500 vines per hectare. Between each row the gap is 1.80m. After the harvest, the grapes end up in thermo-regulated stainless steel vats so that the skin can give tannin, taste and color. The wines are in small quantities to have good concentrations. 9 different wines come out of the cellar. Organic and biodynamic wines. In biodynamics, it is the transition to preparations that will accompany the plant to the natural balance of the soil. IGP and Vins de France because the farm is a bit “isolated”. We are in Creyssenssac and Pissot at a place called Pommier.

Chef Thomas Ternel of the restaurant “Au Cocagne” in Périgueux advises you:

Located on Place St Louis in Périgueux. Thomas Ternel, originally from Lille, runs the establishment “Au Cocagne” since September 2022. It offers a food and wine pairing with those of the “Domaine du Bout du Monde”.

  • Hall : the 2021 dry white aged in vats for 8 months (€7.90) with a Gravlax of trout with citrus fruits.
  • Dish : A dry white wine from France Vino Véro 2020 100% Sémillon with aging in barrels with a Ballotine of poultry with its walnut crust.
  • Dessert : red ; The flying dog 100% Merlot cuvée cuvée 2021 (€12). A fermentation of 3 to 4 days with a chocolate tart and a chilli ganache and a walnut stoetzel on top.
