Sweet potato in pastry and other sweets from Reunion with Robin the Mons chef of Ti Case Papa

On Reunion Island the sweet potato can be cooked both in its salty and sweet version. Reunionese chef Robin Vanwalscappel from the restaurant, snack bar and grocery store Ti Case Papa at 5 Pl. Joseph Pancaut offers it as a cake for Côté Saveurs on France Bleu Gascogne. A sweet potato cake super tasty and very soft. A cake that you will make at home in no time. To make it you need:

  • 1kg sweet potato (preferably white)
  • 200g cane sugar
  • 150g of butter
  • 200g of sugar
  • 4 eggs
  • a vanilla pod
  • about 4 cl of rum

Peel and steam the sweet potatoes. Drain them. Separately, mix sugar and eggs and add the still hot sweet potatoes with the butter which will melt directly. Then add the rum and finally the vanilla pod. If you use orange and not white sweet potatoes, do not hesitate to add a little cassava or wheat flour. Butter your mold (avoid cake moulds) and bake at 200° for 40 minutes. Attention, do not try to plant the tip of the knife to know if the cake is cooked, it does not work in this specific case.
