SURPRISE SOUP

A simple leek / potato soup covered with a soft paste flavored with cumin and cheese, crispy to perfection.

Per person :

For the soup, 1 leek

1 large potato

1 tbsp of hard cheese

Salt and pepper

As a surprise, shortcrust pastry for 1 person, i.e. 30 g of flour, 1 p of salt, 15 g of soft butter, 1 tbsp of water, 1 tbsp of grated cheese and optional ½ tsp of cumin seeds.

Start by preparing the shortcrust pastry. In a salad bowl, pour the flour, salt, mix. In the center, make a well and pour in the soft butter and water. Mix with your fingertips without kneading then “gather” the dough by pressing lightly to form a ball. Cover with a cloth and let stand. Meanwhile, peel and wash the vegetables. Cut them into small pieces. Place them in a saucepan, salt and pepper. Add water at height + 1 height of water. Cook over low heat 20 min. Cut the cheese into small pieces and add it to the soup then mix until you get a creamy texture and a little thick. Pour it into a jar. Flour the work surface, spread the dough in a circle larger than the surface of the jar, place the dough on top of the jar so that it falls on the edges. Press lightly on the top, put in the oven without preheating and cook for 15 min Th 7 (210 °). Take out carefully so as not to burn yourself, place on plates and enjoy.
