SMALL CHOCOLATE CAKES
These small, round, slightly sweet cakes have a strong chocolate flavor. They are perfect for tasting. Amaretti cherries can be replaced with candied cherries or orange pieces or nothing at all. You can add gingerbread spices. We can also with the same proportions, make a family cake, the baking time will be 55 to 60 min.
For 20 cakes:
1 bar of dark chocolate for baking (200g) + 3 tbsp of coffee
1 yogurt (once the pot is empty it will be used as a measure)
3 jars of flour + 2 p of salt
1 jar of sugar
½ jar of crème fraîche
3 eggs
1 sachet of baking powder
Optional 20 amaretti cherries (Italian cherries).
To grease the molds, with butter or parchment paper
Cut the dark chocolate into pieces and place them in 1 saucepan with the coffee. Melt over very low heat, stirring often. Let cool.
In a salad bowl, pour the yogurt pell-mell (without stirring) then, using the empty pot as a measure, add the flour, salt, sugar and eggs. Measure the crème fraîche and add it to the chocolate, stir, pour the preparation into the salad bowl and stir. Mix well. Stir in the yeast. Grease the mussels and distribute the preparation. On each cake place 1 cherry. Bake without preheating and cook 35 to 40 min Th 5/6 (150/180 °). Unmould when the cakes are still hot and let them cool on 1 rack.
