INGREDIENTS
For the caramelized pecans
1/3 cup pecans
3 tbsp. maple syrup
For the waffle maker
1 cup white flour
1 C. baking powder
½ tsp. baking soda
1 pinch of salt
2 eggs
3 tbsp. brown sugar
1 boursinMD Apple & Maple (150 g), halved
1 cup buttermilk
For garnish
2 red apples (Gala, Cortland or Lobo), cut into strips
Maple syrup
PREPARATION
For the caramelized pecans
In a small skillet, evenly mix the pecans in the maple syrup.
Cook over medium heat until mixture begins to simmer. Reduce the heat to medium-low and continue cooking for a few minutes, stirring often, until the maple syrup has evaporated. Spread the pecans on a baking sheet lined with parchment paper and let cool. To book.
For the waffle maker
In a small bowl, combine flour, baking powder, baking soda and salt. To book.
In a large bowl, beat the eggs and brown sugar for a few minutes using an electric mixer. Add half of the boursin cheese and mix well.
Add the reserved dry ingredients to the wet mixture alternately with the buttermilk, without overmixing.
Preheat the waffle maker. Pour in about 3/4 cup of the waffle maker at a time, and bake until the waffles are golden brown.
Decorate with apple slices and caramelized pecans. Crumble the rest of the boursin cheese on top and drizzle with maple syrup.
