Émilie, head chef, learned her skills in bistronomic dining cellars but also in palaces such as the Bachaumont hotel or the Lutétia in Paris. His second in the kitchen is none other than his darling Nikolas with an atypical career because he was a scenographer and decorator at the Moulin Rouge. Her Vietnamese origins (her grandmother) allow her to bring Asian influences to Emilie’s cuisine.
Side room, another couple. Mélanie was a commercial in the textile industry and left everything for the restoration. She pays particular attention to the decoration and the selection of wines. By her side, Élodie watches over the comfort of customers. A former social worker in Paris, she is an expert in relationships.
On the menu:
Practically all the ingredients and wines come from short or even ultra-local circuits.
For the wines:
– Jérôme Collas from the Domaine de la Toupie in Maury. From light whites like the “petit salto” to racy reds like the “quatuor”.
– Anne-Marie Castagné from the Rous de Llaro estate in Perpignan, a former math teacher, she notably offers late-harvest Muscats to die for.
– Domaine Pagnon de Torreilles: Jean Rêve, 100% chardonnay old vat. And their fruit juices: apricots from Roussillon AOP, prickly pears, and organic Merlot grapes.
For the vegetables:
– Hélène and Henri Ballaneda from the Jardin des Saveurs in Torreilles. Nikolas has to rectify his tomato sauces with lemon because they are so sweet.
For the fish:
– Joël Cairat and his fish market La Sardine place Cassanyes in Perpignan, products from the auctions of Rosas, Llança, Port-la-Nouvelle and Le Barcarès. It offers rare products, sometimes anemones, murex (sea snail bristling with spikes which are given a purple hue).
Herbs:
– Les Herbiers de Latour-Bas-Elne: very fresh herbs, edible flowers. Among other things, they deliver the Top Chef film set.
