Ah, Peruvian gastronomy, the list of delicious dishes is long, with ceviche, raw fish drizzled with lime, garlic, coriander and pepper at the head of the line. Peru is a mixture of terroirs with the sea (the long Pacific coast), the mountain (the Andes cordillera) and the jungle (in its Amazonian part). But it is also a mixture of peoples with the Amerindians, and the various successive Spanish, Italian, Chinese and Japanese migrations.
