The harvests of the garden are more than abundant? Follow the trend of pickles vegetables, those marinades that can be prepared in no time. Almost all vegetables are suitable for the game: beans, carrots, beets, cauliflower, cucumbers, radishes, etc.

No matter which vegetables you choose to pickle, the preparation is the same. In a large clean jar, simply arrange the fresh vegetables (whole, sliced ​​or quartered, depending on your taste or the use you plan to make of them). In a saucepan, combine all the other ingredients (vinegar, water, sugar, salt and various and varied spices). Bring to a boil and pour over the vegetables. Let the jar cool before putting it in the fridge. Wait two or three days and consume without moderation!

Spicy bean pickles

In a 1 liter (4 cup) jar

• 450 g of green beans (about 60 to 70 beans)
• 250 ml (1 cup) of white vinegar
• 250 ml (1 cup) of water

• 165 ml (2/3 cup) sugar

• 15 ml (1 tablespoon) of salt

• 1 clove of garlic

• 1 bird pepper

• 5 ml (1 teaspoon) peppercorns

Use to garnish your cocktails, such as the Bloody Mary. For lovers of marinades, these beans can also be eaten like potato chips.

Marinated radishes, mignonette style

In a 750 ml (3 cups) jar

• 350g radishes (about 20 radishes)
• 1 French shallot (sliced)
• 185 ml (3/4 cup) red wine vinegar
• 185 ml (3/4 cup) of water
• 125 ml (1/2 cup) sugar
• 10 ml (2 teaspoons) of salt
• 5 ml (1 teaspoon) peppercorns
• 2 bay leaves

Perfect to accompany a charcuterie platter. Cut into small dice, these pickled radishes can even be used as a garnish for fresh oysters.

Pickled turnips with cumin

In a 1 liter (4 cup) jar

• 650g turnips (4 turnips)
• 250 ml (1 cup) of white wine vinegar
• 250 ml (1 cup) of water
• 165 ml (2/3 cup) sugar
• 15 ml (1 tablespoon) of salt
• 2.5 ml (1/2 tsp) cumin seeds
• 2.5 ml (1/2 teaspoon) peppercorns
• 2.5 ml (1/2 tsp) coriander seeds

To accompany dishes of Middle Eastern origin.

Minute marinades have a clear advantage: they can be cooked in no time at all! Marinated vegetables keep all their crunch and all their freshness. As there is no cooking or sterilization, these pickles will keep in the refrigerator for about two weeks.
