Mangalica, the funny curly pig from Mas Pujol in Fourques

The Mangalica pig (pronounced Mangalitsa or Mangalitza) is an autochthonous Hungarian breed, whose origins are common with the Iberian breed pig.

Physically, the Mangalica has a thicker and longer coat, curly, light and bright, resembling wool in winter and spring. The breed is on the verge of extinction because it is not very productive.

the Mangalica is a rare pig (the Mas Pujol has the only breeding in the department of the Pyrénées Orientales) and very popular with experienced gourmets.

The peculiarity of the Mangalica, apart from its curls, is its fat, an extremely important intramuscular fat (up to 10 cm thick on the back!).

This creamy, slightly sweet fat literally melts in your mouth (it begins to liquefy at 32°c) and contains virtually no cholesterol. It is mainly made up of monounsaturated fat. It is often presented as “the wagyu or the Kobe of the pig” because its meat is very marbled and tender. The flesh is red. As a result, this pork “Rolls” produces exceptional meat with a powerful taste and full of character.

Mas Pujol pigs are raised outdoors in the town of Fourques. You should know that the rearing of pigs in the open air represents only 1% of production in France, which is to say that this commodity is rare.
