The recipes for artisanal charcuterie are family recipes. Do you know Perguez? If so the Perguez! Raw or dried a marvel! And the Skinny? No more !

The Ham Farm practices polyculture in addition to pigs, it has cows but also cereal crops for sows, barley and corn without GMOs, which explains the Label Rouge. On the charcuterie side, we do everything on the farm, which has a dryer, we salt the hams individually with a grammage adapted to the weight of the ham and that changes everything. This is why the ham farm receives prizes at the biggest event of its kind, the ham fair in Bayonne: Price of the Brotherhood of Bayonne Ham 2022: with ham number 19 (7.7 Kg).

Where can you find this Label Rouge free-range pork? At Gerderest at the farm at the store on Thursday and Friday from 4:30 p.m. to 6:30 p.m. At the Morlaas market every Saturday morning on Place de la Hourquie and every other Friday.
