Helping the poorest thanks to solidarity fridges

Faced with malnutrition and food waste, some restaurateurs have set up “solidarity fridges” in front of their establishment. Each day, unused fresh foodstuffs and foodstuffs whose use-by date has expired can be deposited. The only constraint for individuals is not to bring cooked meals.

Everyone in the neighborhood can therefore either fill the solidarity fridge or take food for the poorest. A beautiful anti-waste dynamic born abroad and which inspired a young Parisian restaurateur, Donia Mebtoul. She installed the first solidarity fridge in France in front of her sign, The Canteen of 18rue Ramey in Paris.

Thierry Marx supports this initiative and adds that it is also appropriate, at a time when there are eight million people who benefit from food aid, to work to put people in difficulty in perspective of social development. He offers here a cheap recipe based on apples.

Ingredients for two :

2 apples, 25 g of butter, 1 teaspoon of oil, 50 g of sugar.

Preparation :

Peel the apples, cut them into quarters and remove the core seeds. Stir them in the sugar.

Melt the butter in a skillet with the oil over high heat. Toss in the apple quarters to caramelize them a little. Lower the heat and let the apples cook for 10 minutes.

Serve warm, the apples will taste like tarte tatin without the dough.
