Auvergne hams finish their maturation in an unusual place: the cathedral of Saint-Flour (Cantal), the highest in Europe.
Nestled at an altitude of 892 meters, the cathedral of Saint-Flour (Cantal), the highest in Europe, houses a treasure. About fifty hams from Auvergne mature here, quietly, to the sound of bells and the organ. A happy marriage between the terroir and the religious heritage.
Thanks to the sale of these hams, the heart organ of the cathedral could be restored. At 145 euros, they are all already sold to individuals and great chefs, like Jacques Marcon, who has come to collect his goods. “There is all this atmosphere which brings an additional soul”says the 3-star chef, Wednesday August 3rd. “Of course, it’s a good product, but that’s all there is to it. It’s like in a restaurant, it’s not just the plate”explains Jacques Marcon, tasting one of these very special hams.
