La Ferme de la Moulière is a family farm with around fifty Prim’Holstein dairy cows, cereals and land for pasture. The farm has been organic since December 2020. The cows produce 450,000 liters of milk per cow per year.
Most of the farm’s milk production is sold to the cooperative, but 10 to 15% of the production is done through direct sales. The idea germinated by looking at what a farm in northern France is already doing, which sells its milk directly to the markets.
Raw milk for direct sale
Florentin Gourmand takes care of the animals while Mélanie Lasnier, his wife, has set up “Lait Gourmand de la Moulière” to sell milk directly since March 2020.
She makes home deliveries of milk on Mondays, sets up her truck on Thursday afternoons in Montamisé and on Fridays in the parking lot of the Saint Georges-les-Baillargeaux supermarket. It also does the markets of Montmorillon on Tuesday, Buxerolles on Thursday and Bonneuil-Matours on Saturday.
Milk is also sold to professionals, in grocery stores, producers’ stores, organic stores.
An ideal milk for cooking
This milk comes out of the cows’ magpies and is only refrigerated after milking for sale. Its quality is checked regularly. It is advisable to boil it within three days after purchase, then it will keep for a week. This whole milk is very popular for making homemade yogurts, pastries, desserts, but also to be drunk quite simply.
Lait Gourmand de la Moulière has a project for 2022: transforming its milk into yoghurts, cottage cheese and crème fraîche.
