FESTIVAL CAKE (with or without gluten)
A cake that must be broken, broken so everyone chooses the piece that suits them! A slightly sweet pancake to serve with custard, praline compote, Chantilly cream, etc.
Once Epiphany has passed, the pancakes should not contain beans! But each one does as he wants!
For a 25 to 28 cm mold, multiply the proportions and the cooking time by 3. For more flavor, it is preferable to grind the almonds at the last moment.
Per person :
2 tbsp of corn flour (gluten free) or 2 tbsp of wheat flour (with gluten)
1 p of salt
2 tbsp ground almonds
1 beaten egg
1 tablespoon of sugar
1 sachet of vanilla sugar
1 tbsp of crème fraîche.
To grease the mold, butter or parchment paper.
In a bowl, put all the ingredients in the order listed, then stir to combine everything. Leave to stand for 20 minutes then stir again.
Grease the mold, pour the dough and bake without preheating. Bake 20 min Th 5/6 (150/180 °) for a small mold. Unmould and cool on a wire rack.
