Chartreuse is a liqueur made at the Aiguenoire distillery in Entre-deux-Guiers in Isère, in the heart of the Chartreuse Massif and under the supervision of the Monks of the Grande Chartreuse monastery, it is also the only financial resource of the Carthusians. The green Chartreuse draws its unique character from its natural color, its power and its aromatic complexity, no less than 130 plants, flowers, barks make up this liqueur. Its development requires several weeks of work. It is composed of alcohol, water, sugar and vegetable substances including a degree of 55% alcohol.
Dada sommelier: During the tasting, we find a chartreuse green color, a powerful, herbaceous, peppery nose. A fresh palate with menthol, pine sap and citrus notes.

Dada sommelier is in fact Damien Olivier, the sommelier of the Avant Comptoir du Palais place du Palais in Bordeaux, a place of pleasure for all Bordeaux gourmets, run by Julien Camdeborde (the nephew of Yves Camdeborde, the Chef who created the bistronomy). Damien and Julien, two people who have been working together for several years, looking for the best pairing with seasonal culinary creations. After a classic career, Damien Olivier worked at St James in Bouliac under the orders of Chef Michel Portos. Then, a stop in London then in the Seychelles, and return to France for the opening of the Intercontinental in Marseille. It is in this city that Damien Olivier embarked on a quest for travel.
