Alcachofas con jamon : take small artichokes, remove the outer leaves and keep only the heart, cut it in half and cook it for 20 minutes in salted water with lemon (keep a little cooking water).
In a frying pan with olive oil, sauté chopped garlic and a few pieces of Bayonne ham. Flour everything and moisten with the cooking water from the artichokes to obtain a thick and creamy sauce. Immerse the artichokes in this preparation and serve hot!
