CHRISTMAS MOUTHS with DRIED FRUITS
Dried fruits – orange peel, lemon, some raisins, almonds and a little chocolate for easy Christmas bites!
The proportions are easy to remember half chocolate, half dried fruit and for dried fruit 2/4 orange and lemon peels 1/4 raisins and ¼ almonds.
* Almonds can be replaced with hazelnuts, walnuts, cashews, etc. Almonds must be ground at the last minute!
** The bites don’t have to be very big, they must fit in the mouth all at once, hence their name!
For about twenty bites:
60 g dark chocolate for baking
2 tsp of liquid coffee
30 g lemon and orange peels
15 gr of raisins
15 g whole almonds, peeled with the skin *
For the decoration, 1 tbsp of ground almonds
Cut the bark into small pieces. Mix (or cut in a food processor) together the peel, grapes and almonds then knead this preparation well and set aside for 10 min. In a saucepan put the chocolate to melt with the coffee, stirring constantly. While it has taken on a nice shine, is completely melted and hot, add the dried fruits and mix until you obtain a smooth paste. Shape into small bites **. For the decoration, place the ground almonds in a deep plate, place the warm bites on top, then shake the plate like a sieve so that they coat the almonds. Once cooled, these bites keep perfectly in a non-airtight box… when given time!
Nice cuisine to all, Régine
