This new ephemeral project, which may come back to life at the Grand Marché or elsewhere in the future, is worth the detour: it’s the talented duo of cooks made up of Pierre Olivier Pelletier and Cassandre Osterroth, behind the excellent Kébec Club Privé table, at Quebec, who wears it.

The idea is simple, but appetizing, and all in curves: a kiosk offering two elements — one savory and one sweet — to devour on the go, namely focaccias and Cookies », with various toppings, varying according to seasonal products and inspiration.

On the one hand, the focaccias are adorned here with a gravlaxed beef tartare, egg yolk confit with paprika and homemade gherkin or even homemade smoked salmon, a Béarnaise sauce and marinated onions; on the other, soft cookies, for example the chocolate chip cookie stuffed with a popcorn crème brûlée, then topped with caramel and buttered popcorn kernels, or the one combining fresh strawberries and hay creme brulee odour. Decadent, original and highly satisfying.
