Beaujolais Nouveau has arrived !!!

Beaujolais Nouveau arrived with the 3rd Thursday of November. A national day for all epicureans around the world, we are going to celebrate, toast, at the release of this young wine called primeur. It is made using a unique winemaking technique: carbonic maceration. Harvested, vinified and bottled in a few weeks. Made only from the Gamay noir grape with white juice.

Dada sommelier: Beaujolais is also: a diversity of terroirs, agronomy in biodiversity and respect for nature, winemaking in search of expression, roundness and purity, wines of character with personality and elegance.

This year again the quality and freshness are at the rendezvous. Damien presents Olivier Depardon’s Beaujolais-Villages Nouveau, a young wine with character. Red fruits, liquorice, sweet spices, define the pleasure we have in tasting it. A family estate, that of La Bêche to be precise, created by Henri DEPARDON in 1848 in Morgon Villé in the Beaujolais vintages. 7 generations separate Henri and Olivier. In agreement with this gourmet wine, Damien invites you to a beautiful charcuterie like the black pudding of Philippe Camdeborde, the papa of Julien, the Chef of the front counter of the palace in Bordeaux. Beaujolais Nouveau is served at a rather cool temperature of 14 degrees and the glassware has a beautiful balloon glass.

Dada sommelier is in fact Damien Olivier, the sommelier of the Avant Comptoir du Palais Place du Palais in Bordeaux, a place of pleasures for all Bordeaux gourmets, run by Julien Camdeborde (the nephew of Yves Camdeborde, the Chef who created the bistronomy). Damien and Julien, two people who have been working in concert for several years, in search of the best harmony with seasonal culinary creations. After a classic career, Damien Olivier worked at St James in Bouliac under the orders of Chef Michel Portos. Then, a stop in London then in the Seychelles, and return to France for the opening of the Intercontinental in Marseille. It is in this city that Damien Olivier embarked on a quest for travel.
