Estérençuby, a village in Lower Navarre which is found 13 kilometers south of Saint Jean Pied de Port, at the bottom of the valley and which is just over 60 kilometers from Bayonne. It is a very pretty village which is crossed by the Nive and which is surrounded by mountains.
The Sources de la Nive hotel restaurant
Our hosts of the week, Xalbat and Patricia Tihista are the 5th generation to manage the establishment of Sources de la Nive. There are more than twenty rooms and a restaurant with home cooking overlooking the Nive, which at this point is still just a river. From the hotel restaurant, you will have the opportunity to go for a walk to the source of the Nive or to the Harpea cave.
Mendi Gaiak
Mendi Gaiak is a group of mid-mountain guides and caving professionals who offer different types of outings throughout the year. With them you have the opportunity to go hiking, caving, canyoning, climbing, mountain biking. But also themed outings such as a sunset in the mountains or a hike to meet vultures. Around Estérençuby, they offer a hike, every Tuesday in summer, to the Urkulu tower and to meet a producer of sheep’s cheese in the mountain pastures. Do not hesitate to contact them to organize a great outing.
Electric bikes in Estérençuby
Eric Larramedy, from the hotel restaurant Andreinia, came to talk to us about the electric bicycle project. First in relation to the Euro Vélo 3 project, the town hall in collaboration with the three restaurateurs of the village (Andreinia, Sources de la Nive and Carricaburu) decided to obtain several electric bikes in order to make it available to customers. so that they can discover Estérençuby and its mountainous surroundings in a sporty and ecological way. This equipment will of course be available from this summer of 2022 free of charge and two “repair” points will be set up, one in front of the town hall, the second at the Sources de la Nive restaurant.
Cheeses at Paulenia
Christelle and David Irola are the co-managers in GAEC of the Paulenia farm in Estérençuby. They produce Ossau-Iraty sheep’s cheese all year round with black head manex sheep’s milk. Their animals spend six months of the year in the summer pasture, which makes their milk richer and therefore better for processing. At the Irola, you will also have the possibility of finding curds and breuil (in season). To get their products, you can go directly to the farm or else they are present every Saturday on the Ustaritz market from April to October.
