A ham between 7 and 8 kg, worth around €300, of exceptional taste quality!
The Gascon pig is a slow-growing breed of pig. To give the meat a maturity and superior quality, Céline and Sébastien raise their cattle for at least 15 months. The pigs feed on farm produce: corn, peas, field beans, wheat, barley, etc. In season, they love acorns and chestnuts.
The Gascon pig, a protected breed
Gascon pork is the equivalent of Noir de Bigorre, a protected geographical designation. Since 2017, Céline and Sébastien Chinouilh have joined the National Association for the Safeguarding of Gascon Pork. The Gascon breed was found in very small numbers in the 80s and kept from a core of only a few dozen animals. The tenacity and hard work of breeders like Céline and Sébastien saved this breed.
