Gallika’s tzatziki

A traditional recipe for Greek cuisine to discover in one of Gallika’s addresses (Paris 1st, 2nd, 8th, 9th) or for delivery.
Preparation : 10 minutes
Rest : 3 hours
Ingredients
■ 1 cucumber
■ 1 large clove of garlic
■ 300 g of (real) Greek yogurt
■ 3 tbsp. teaspoon of olive oil
■ 1/2 lemon
■ Salt and pepper.
Step by step
√ Peel then grate the cucumber. Wring it out to extract as much water as possible. For ease, you can do it in a tea towel!
√ Using a garlic press (ideally!), press the garlic clove. Remember to remove the germ first!
√ In a bowl, mix the yogurt, cucumber, garlic, olive oil, juice of half a lemon, a pinch of salt and two turns of the pepper mill.
√ Let it sit for a few hours before eating it. This way, the garlic will have had time to infuse a little, and it will be much better.
√ Add a dash of olive oil before serving.
Then enjoy with hot pita bread, raw vegetables or even as a condiment with baked meat or vegetables! It is delicious !
