Pesto soup
Pistou soup is a summer vegetable soup, with pasta, served with pistou, a crushed mixture of garlic, olive oil and basil. So far, so good.
The pesto (from Occitan _pista_r, “to pound”) is pesto neighbor (from Italian plague, same meaning as in Occitan) of Ligurian cuisine. The latter, however, contains sprocketsfrom Parmesan cheese and pecorino. The term pesto designates in Provençal, mortar pestle which is used to make the preparation, and not the basil, which is said baseli Where balicot.
As basil loses a lot of its flavor during cooking, the pesto is generally mixed with the soup when serving, or served separately, to be mixed directly on the plate by the guests.

Especially come share a friendly moment where good humor will be at the rendezvous. How the day went
- 8:30 a.m.: Welcome and installation of participants, Place Jourdan in Miramas. Each team is autonomous and chooses a location according to the markings on the ground.
- 9:30 a.m.: Official opening of the Pistou Soup World Championship. Presentation of the jury.
- 10 a.m.: Distribution of ingredients according to the number of registered guests.
- 12:30 p.m.: Meal out of the bag, around the cooking pots.
- In the afternoon, distribution of anonymous pots. 3 p.m. to 5 p.m.: Provençal atmosphere (music, games)
- 4 p.m.: Sentido by the jury. Presentation of the soups and return of the pots to the deliberation table. Tasting by the jury and awards.
- 5 p.m. to 8 p.m.: Peña atmosphere
- 6 p.m.: Announcement of the 2021 world champion
- 8:30 p.m.: Banquet
