CRAZY HERB CAKES
A recipe to accompany raw vegetables and a shallot/yogurt or mustard/yogurt chutney preparation.
To release more flavor, the garlic is crushed with a butcher’s leaf (cleaver) before being finely minced.
Per person :
1 ladle of stale bread soaked in water
1 tbsp finely chopped aromatic herbs
1 clove garlic peeled, crushed and minced
1 egg, salt and pepper
1 tsp fat for cooking
1 or 2 slice of cheese (tome or other)
Optional chutney/yogurt or mustard/yogurt preparation for garnish
Squeeze the bread well and mix it with the herbs, the garlic, the egg until you obtain a homogeneous paste. Season with salt and pepper, mix and leave to rest for at least 20 minutes. Heat the material in a frying pan, pour the preparation into it in 1 or 2 pancakes, cook over low heat for 5 to 6 minutes then turn over and cook the second side identically, turn the pancake over and place the cheese on it, cover and let it melt 3 to 4 mins. Serve hot, warm or cold.
