Aldabia the poultry of the Basque Country

At Aldabia all poultry is fed with GMO-free cereals produced in the Basque Country by twelve breeders around Saint-Martin d’Arrossa. Poultry reared in the open air and whose feed is supplemented by grain corn in the last month of breeding. This feed gives poultry a unique flavor with firm flesh containing little fat and water. 91 days is the time needed to bring poultry to maturity and give free-range chickens a much higher quality than conventional poultry.

Side flavors also gives you some keys to successful cooking of chicken with the advice of Anthony Durruty from Aldabia and the Chef du Garde Manger Nicolas Garbay who shares his recipe for chicken blanquette with small mushrooms, a simple recipe to make and which will delight the whole family.
