Dawn Trout
Sylvain’s fish farm is located in Veuxhaulles sur Aube. It produces:
- trout mousse with seaweed, Indian style and Burgundy truffles
- natural trout rillettes with tarragon
- trout terrine with vegetables and candied lemon
- trout sausages with curry sauce, fish sauce and Chablis sauce
- Salmon eggs from Fontaine
- fresh or smoked trout fillets
The Marronniers cheese dairy
Alain raises Montbéliard cows to produce the local Epoisses cheese. But he also makes cottage cheese, yogurts, ch’tit Bourguignon, salty white from old Drumont, fresh cream, etc. The Marronniers cheese dairy is in the town of Origny.
