Conservation and tasting of your Bayonne ham

Bayonne ham on the bone can be stored at room temperature in a canvas bag or cheesecloth in a dry, ventilated room for 6 months. Placed on a ham clip, in optimal tasting conditions, the ham will deliver its aromas and flavors to you. Once the ham has been started, protect its slice with a little oil and parchment paper.
Using a sharp blade, cut a few shavings or thin slices and let them melt in your mouth. Lightly pan-fried, Bayonne ham can be eaten with a gourmet salad or sliced with a piperade.
