Bakers are trying to contain rising energy and commodity prices. But for how long ?

Will the wand increase? For the moment, Clément Buisson, baker, manages to maintain the price of his bread. “Our flour has not increased with the conflict. It’s the same baguette, the same price, nothing changes”, he assures. The baker makes more than 1,000 baguettes a day. If the price of flour goes up, he will have to raise his prices. “Everything increases, it’s not just flour. There is electricity, gas, minimum wage, gasoline”he lists.

He buys his flour at the Moulins Bourgeois, in Verdelot (Seine-et-Marne). 360 tonnes of wheat are dumped every day. Pierre Marteau, technical director of Moulins Bourgeois, pays 400 euros per ton for his wheat, “double last year”. With the war in Ukraine, the world price of wheat continues to rise. “We are very worried about this rise in the price of wheat, (…) we have never experienced such a high price of wheat. Unfortunately, we will be forced to increase the price of flour, in a proportion of 10 to 15%”explains David Bourgeois, General Manager of Moulins Bourgeois.
