Two-star chef, black belt judoka, TV man and now a leader in the profession. Thierry Marx has become president of the Union of trades and hotel industries. Its objective is to make the profession attractive again, and to adapt it to the challenges of the moment. “I wanted to be able to weigh a little bit on this activity, especially on the social impact. I thought we were a little short of what needed to be put in place, and on the impact environmental“, he confides.
Thierry Marx is first of all a great to cookwhich makes its cuisine a fusion of French and Asian influences. A precursor of molecular cuisine, his dishes are spectacular, in the mouth as well as on the plate.
