We received Thomas Orcel and Mathis Coissieux, from Maison NIVON, avenue de la gare in Valence.
Thomas is a pastry chef and Mathis is a baker. Together, we mentioned the Galettes, but also the other specialties they offer for the season of Kings: the Famous “Kingdom”, or Brioche Porvençale, a brioche with delicious and real candied fruit and the essential bean, of course.
As for Thomas, he offered us his Galette Pâtissière recipe, which he offers, a galette and a Valrhona chocolate puff pastry.
