Laurette is 27 years old. 3 years ago, she decided to reopen the only bakery in Coësmes, a village of 1,500 inhabitants located in Brittany. This is what his days look like.

Five years ago, the Breton village of Coësmes no longer had a bakery. It’s now a bygone era thanks to Laurette, a young 27-year-old baker, who decided to reopen the business to the delight of the 1,500 residents. “What we realize most is that in the countryside, it is isolation that creates the most damage. So a bakery is one of the places where we come together around a product that is nice. Because bread is used for every meal” comments the baker.

The Coësmes bakery reopened 3 years ago

In 2020, the young woman presented her reopening project to the town hall, which supported her. “It was the town hall that did the work in the premises, so they paid, in the sense that they updated everything, even though it was a reserve” says Laurette. “We have trouble keeping our small businesses, so the idea was to support someone who wanted to get started” added Luc Gallard, the village mayor. Since reopening, the bakery has been full. Laurette’s favorite time of day is sales, when she interacts with customers. “What I like most about this job is having people in the bakery to explain what I do.”. The young baker also set up tables outside so residents could sit and chat together.
