Brut went to the greenhouse and to Damien’s lab, where he transforms his snails into dishes to taste, but also into cosmetics…
Before, Damien was a soldier in the air force. More specifically, he was a computer scientist. At the end of his contract, he felt the need to change jobs for something closer to nature. We went to the greenhouse, located in the family garden where he breeds his 4000 snails.
In the greenhouse, Damien ensures that all the conditions the snails need are met. “It starts with water, we also add vegetation to them so that they can feed themselves.“, he specifies. To do this, Damien obtains leftover vegetables, either from market gardeners or early vegetables, in particular unsold ones. Also, Damien must add a small calcium powder, necessary for the envelope made up of limestone from the eggs of its snails.
With the reproduction of his 4000 snails, Damien can obtain around 80,000 snails for the new season.
