Alexia Duchêne is a French chef, semi-finalist of season 10 of Top Chef at only 23 years old. For Brut, she returns to the dish that reminds her of her childhood: breaded chicken with rice.

Cooking is a family affair for Alexia Duchêne. With parents of different origins, the young woman was able to taste a multitude of flavors. “My mother is English, but she grew up in Egypt and Greece, so a lot of Mediterranean cuisine, and my father is Norman. So a lot of Orloff veal, rich stuff, cream chicken, things like that.” For Brut, she returns to a dish from her childhood that her mother prepared a lot: breaded chicken with rice and a tomato and cucumber salad.

“When my mother asked us what we wanted to eat and we had a little crazy day, or something like that, we always asked that. And even for my birthday, I love it. C It’s a simple comfort food.” In the kitchen, the young woman explains to what extent frying plays an important role in her recipes. “Frying, for me, is downright regressive. My mother, she is English, so everything that is fried, everything that is crispy, is a bit like her Proust madeleine, so on the one hand, me too.”
